Our Wines

A vast regeneration programme has been under way to produce the best red, rosé and white wines using modern and ecological methods. The north-facing, high-altitude terroir, with cold nights throughout the year, helps us produce fresh, fruity wines. We get low yields but aromatic and concentrated grapes from our old vines. Grapes are hand-harvested with great care on nearly the whole estate.

Our state-of-the-art winery enables us to vinify with minimum intervention in the most natural way. The grapes are sorted on the sorting table, then partly destemmed in our wonderful Dream machine and gravity-poured in concrete vats for maceration. White grapes are slowly pressured in the pneumatic temperature-controlled pressoir.

Vinification and ageing occur in concrete and thermo-regulated stainless vats, as well as large oak vats (6 to 50 hl), concrete eggs and terracotta amphoras. This range of receptacles enables us to fine-tune our blends and aging methods. The vinification process is precise and rigorous, with the lowest levels of sulfites. The wines fully reflect the quality of the vines and the terroir.
