Grenache-dominant cuvée, elegant and balanced, combining fresh fruit flavors with smooth tannins. It is named after the saint whose effigy adorns the old chapel.

The effigy of Saint Célestine adorns the château's chapel. We have chosen her name for our first cuvée.
Terroir
North-facing exposure, altitude 350 m. Old vines at the top of the estate, 70 years old, on Cretaceous and Miocene limestone.
Culture
Organic conversion started in late 2018; organic fertilizers; active promotion of biodiversity and enrichment of the microbiome.
Harvest
Mid-September; low yield of around 21 hl/ha.
Vinification
Grenache: 3-week maceration of whole berries; blended with 20% Syrah; Grenache aged 22 months, 80% in demi-muids (6 hl) and 20% in stainless steel tanks; Syrah aged in conical tanks; sulfites below biodynamic standards. ALCOHOL 14.5%.
Tasting
Color: deep ruby. Nose: Morello cherry, laurel, pepper. Palate: same notes, with a fine tannic structure. A wine with character.
Pairing
Braised meats, spicy dishes, sweet-and-salty recipes.

5 to 8 years
